La Soeur Cadette is a negociant project he started in 2016. This predominant Chardonnay comes from 45 year old vines from northern Mconnais. Spontaneously fermented in stainless tanks for 7 months and then bottled unfiltered. It is crunchy, crisp and fresh. Think green apples, lemon peel, pithy fruit and white orchard
